A simply produced, but not simple Cremant.  This is a cuvee of 60% Chenin Blanc with 40% Chardonnay from the village of Amboise.  The organically farmed grapes are direct pressed into stainless steel, where they ferment spontaneously.  The juice is aged for almost two years on lees to build character and structure.
