Organically farmed Barbera and Bonarda (in this region known as “Croatina”) from the iron-laden higher elevation soils in Gutturnio in Emilia-Romagna.  As is traditional in the area, this undergoes spontaneous but slow co-fermentation in concrete before being bottled under cap for secondary. Just the faintest whisper of residual sugar is expected in most vintages.
