A fascinating bottling of Champagne to say the least. Horiot blends 80% Pinot Noir with 20% Pinot Blanc for this cuvee, which adds depth and creaminess. The solera of reserve wine brings an additional depth and roundness, and in certain years, Horiot will bottle the “Metisse” as an Extra Brut instead of Brut Nature if he feels that it will suit the vintage better.
