Tasting Notes: Deep and dense ruby red / violet. On the palate, this wine is particularly rich and mature. It is well-balanced with the wide spicy flavors ranging from hints of black pepper, balsamic and tobacco.
Food Pairing: Hearty, savory dishes: hamburgers, bolognese and tagliatelle with ragu. Also pairs well with smoked or barbecued meats and Impossible burgers!
Vineyard: 5 ha, organically and biodynamically farmed clay soils
Harvest: Hand harvest in small crates
Vinification: Spontaneous fermentation, 20 days on the skins.
Aged in neutral 24hl oak barrels.
