Cherchi is a legend in Sardinia, where he was among the first to experiment with lees-aging on his Vermentinos. His Cannonau (the local name for Grenache) is a bright, red cherry focused, lighter bodied version that sees 8-10 days of maceration before aging in larger, mature oak casks and a portion of stainless steel to preserve freshness.
