Pet-nat Trebbiano from Emilia-Romagna. Not that Pet-nats tend to take themselves seriously, but there’s some thoughtfulness here. Organic and biodynamically farmed grapes, spontaneous native yeast fermentation, no fining or filtration and minimal sulfur usage. It’s bright, crisp and lively with some nutty flavors and citrus vibes.
