This is the first release of pure Chenin Blanc that we have had from Côme in many
years! The grapes come from the hillside of Puy Notre Dame in the Saumur
appellation. It is a blend of two different vintages: 2020 and 2021. The grapes were
pressed directly, and after the initial fermentation, the wines were aged on average
15 months in neutral oak barrels. This wine has a refreshing acidity accompanied by
a bouquet of stone fruits. This would pair nicely with goat cheese, scallops cooked
with citrus, or fish cooked simply in beurre blanc.
