Grape Varieties: Predominantly Gamay, with Grolleau Noir, Grolleau Gris
After the 2021 harvest the Gamay and Grolleau Noir underwent semi-carbonic
maceration for three weeks to help preserve the freshness and fruitiness of this
wine. In 2022, Côme made a rosé of Grolleau Gris, and he decided to blend these two
wines together to make this edition of Onomatopée. Onomatopée possesses elegant
tannins and nose that reminds us of redcurrant and strawberries. It would make a
great pairing for salmon grilled on a cedar plank, cooked ham, and charcuterie.
