Grape Varieties: Predominantly Gamay, with Grolleau Noir, Grolleau Gris
After the 2021 harvest the Gamay and Grolleau Noir underwent semi-carbonicmaceration for three weeks to help preserve the freshness and fruitiness of thiswine. In 2022, Côme made a rosé of Grolleau Gris, and he decided to blend these twowines together to make this edition of Onomatopée. Onomatopée possesses eleganttannins and nose that reminds us of redcurrant and strawberries. It would make agreat pairing for salmon grilled on a cedar plank, cooked ham, and charcuterie.
