The cellar at Saint-Chamant is a wonder. Hundreds of thousands of bottles line the mile long cave, waiting patiently for disgorgement. This is because, quite uniquely, the house waits until orders have been placed before disgorging. This means that all the wines spend extra time on the lees and could be considered RD.
