Caluso is a fascinating place, where Erbaluce can be made into still, sparkling or sweet wine, all with DOC status.  In this case, it’s the sweet, but not too sweet version. Grapes are dried on straw mats over the winter, allowing them to dehydrate, but also taking on some botritis.  This leads to a more complex sweet wine that isn’t too high in alcohol.
